What it is

MICROTAL® OLV-32

MICROTAL® OLV-32 is a micronised natural talc with a layered microcrystalline structure, engineered with a specific particle size to specific surface ratio that increases oil release during olive paste malaxation. It is manufactured by CERAS and meets the purity criteria required for use as a processing aid in olive oil production.

How it works

How it works

Its action is purely mechanical: the talc platelets break oil-water emulsions and promote coalescence of oil droplets during malaxation, improving downstream separation in the decanter. It does not alter oil composition — mineral residues are removed during processing — and it triggers no biochemical reactions, unlike enzymatic aids. Dose and addition point depend on variety, ripeness and mill equipment.

CERAS ran a joint programme with INTA San Juan to assess the extractability performance of MICROTAL® OLV-32 talc in olive oil production, with extraction trials on SPREMOLIVA equipment. The product also holds SENASA food additive certification, complies with the Australia and New Zealand Food Standards Code and is produced under an ISO 9001 certified management system.
